El objetivo del presente estudio fue evaluar el efecto que ejerce la luz blanca artificial sobre la estabilidad de las betalaínas provenientes de hojas de !resine diffusa, para lo cual extractos brutos de betalaínas fueron expuestos bajo la acción de la luz blanca artificial a pH 6.1 y temperatura 18 ± 1 ºC, La degradación química fue seguida a través de mediciones de Absorbancias máximas (Am ..J cada 5 horas durante 45 horas a 536 nm, en un espectrofatómetro UV-visible 2100 marca UNICO.Con los resultados obtenidos se determinó Constante de velocidad de reacción de degradación (K: 12,38 x 10-3 horas-1 ), orden de reacción: primer orden y periodo de vida media (t112 : 56 horas ). |
